I want to recreate the logo for the company I work for in 3d, but I'm a little confused as to how to make some of the shapes required. Mostly it's in the curves. I'm not sure how to make these types of curves.

One way would be to mark out the shapes as splines and then add an extrude modifier. Or you could start with a plane and move vertices until they look like the curves in the logo.

I would also favor the "Spline + Extrude" method. Once you complete the spline path you can convert it to an editable poly and then extrude the face that it creates.
