Lots and lots and lots of tweeking, and when you're done, than tweek some more, i can name at least 20 mistakes on that car that i should have fix (like that hood surrounding the head light, not smooth enough and so on...) but i just call it finished and started on a new project.
Btw, i'm a sucker for Mustangs as well, especially for .67 Mustang, aaa i want that car

What kind of modeling technique did you use?

Mostly poly modeling and splines, on this model i used nurbs to make the windows.
Usually i start of by making a tube representing the wheel arch, delete the back faces and basically making it into a plane, then extruding the edges adding loops and so on. The trick is to detach the car elements, like front part, doors, roof, back end and so on to minimize unnecessary geometry. and as i said lots of tweaking and adjusting.
